We are seeking a Wine Director to lead and shape a beverage program rooted in intention, seasonality, and a deep respect for producers.
Open now in the West Village, we are a 30-seat tasting menu restaurant built on a zero-waste philosophy and a closed-loop approach to sourcing. The menu moves with the seasons, highlighting whole-animal butchery and vegetables at their peak, with a perspective shaped by New York and Brazil. The wine program is an extension of that ethos.
We are looking for someone who approaches wine with curiosity, precision, and restraint. The right candidate understands that a great list is not about excess, but about clarity—thoughtfully chosen bottles that speak to place, process, and people.
Responsibilities include:
Building and maintaining a focused, evolving wine list aligned with the menu and philosophy of the restaurant
Sourcing from small, responsible growers and producers with an emphasis on sustainable practices
Developing pairings for a seasonal tasting menu
Leading all aspects of beverage service, including staff education and guest experience
Managing inventory, ordering, and cellar organization with care and efficiency
Collaborating closely with the kitchen and leadership team to ensure cohesion across the experience
We’re looking for someone who:
Has strong foundational wine knowledge and service experience in fine dining
Is deeply interested in grower Champagne, low-intervention wines, and classic regions approached with a modern lens
Is highly organized, detail-oriented, and present on the floor
Leads with calm confidence and values a small, collaborative team environment
Communicates clearly and thoughtfully with both guests and team
